Circular economy establishes a more sustainable model of production and responsible consumption, in which raw materials remain longer in productive cycles and can be used repeatedly, thereby generating much less waste. With this approach, the Functional Food Research and Development Center (CIDAF) promotes the circular economy of olive groves in Andalusia by driving, within the framework of the PROSOST project, the use of olive leaves from the waste of olive harvesting, which until now had low commercial value or were treated as waste, according to Cooperativas Agro-alimentarias de Granada. This utilization would be carried out through the transformation of these residues into new high-value protein ingredients.
According to the organization, this not only contributes to the sustainability of the agri-food sector but also opens new business lines and national and international markets, strengthening the positioning of Andalusian companies in the field of functional food.
Specifically, the PROSOST project focuses on the research and development of prototypes of innovative protein ingredients from sources alternative to animal protein. Thanks to the experience accumulated in recent years, CIDAF has been able to consolidate its technological capacity in the field of alternative proteins, equipping itself with laboratory and pilot plant teams that allow for the entire production process to be carried out, adapting it to the characteristics and purpose of each ingredient.
Cooperativas Agro-alimentarias de Granada has specified that, currently, the project is in a key phase, in which protein extraction processes from the selected raw materials are being optimized. This advance, in their view, is a fundamental step to improve the efficiency and quality of the developed ingredients, with the aim of facilitating their future application in innovative food products.
Beyond the scientific and technological impact, the organization has emphasized that PROSOST represents a strategic opportunity for the Andalusian agri-food industry. Through this project, CIDAF is strengthening its collaboration network with sector companies, identifying potential beneficiaries of these new technologies, and facilitating the transfer of knowledge and the development of new patentable products.
